3 Easy On-the-Go Breakfast Recipes

With the race against time every morning, you may not have time to sit down and eat breakfast. These are some simple recipes of tasty breakfasts you can make in advance to beat busy mornings. They are also easy to take with you as you leave the house for school or work!

Overnight Oatmeal with Blueberries

Ingredients

1/2 cup of rolled oats

1 cup of almond milk (or regular milk!)

1 teaspoon of honey

1/4 teaspoon of pure vanilla extract

Sliced almonds

Blueberries

Directions: In a small mason jar, combine the oats, milk, honey, and vanilla extract. Put the cap on tightly and shake it to mix it up! Keep it in the refrigerator overnight. When you are ready to eat it (either 8 hours or up to 5 days later), take off the cap and throw it into the microwave for two minutes. Top with as many almonds and blueberries as you want and enjoy!

Strawberry Banana Smoothie

Ingredients

1/2 cup of plain yogurt

3/4 cup of roughly chopped strawberries

1 banana (cut into chunks)

1/2 tablespoon of honey

Directions: Put all of the ingredients into the blender, and gradually puree. If the smoothie is too thick, add a teaspoon or two of milk to make it the perfect consistency. Pour it into a to go cup to enjoy it on your way out in the morning!

Avocado Toast

Ingredients

1 avocado peeled and seeded

2 tablespoons of chopped cilantro

Juice of 1/2 lime

2 slices of bread (type of bread is your choice)

Salt and pepper to taste

Directions: Toast 2 slices of bread in a toaster until golden and crispy. In a small bowl, combine and mash the avocado, cilantro, lime, and salt/pepper to taste. Spread half of the mixture on each slice of toasted bread in the morning and enjoy!
